The right proportions of ingredients to make your Paella a success
The indications issued by the A.O.C. do not give the proportions of the paella. And whether in books or on the internet, it is difficult to find identical values. Here is an average noted for the paella recipe..
The table of proportions of the paella
The table of ingredients by number of people:
* : The meat :
1) It is not uncommon in the recipes of the best chefs in Valencia to find more meat. But by experience, in France, meat often remains at the bottom of the paella …
2) Most paella recipes advise more chicken than rabbit, 60% / 40%. Make your taste …
**: Garrofe bean:
Many recipes add a bean called tabella and often the indicated dose of garrofon in my table is divided 50% “Garrofon” 50% “Tabella” or 60% / 40% …
***: Rice:
See the following title 🙂
**** : Saffron :
Nowadays, considering the price of saffron and the little added flavor, many people use artificial colors. But these are increasingly recognized as dangerous for health. To avoid then!
Rice in the proportions of the paella
It takes 100 g of rice per person. We usually say: a small coffee cup per person. But do not hesitate to take 120 g and up to 150 g if you have big eaters.
Water in the proportions of the paella
How much water in a paella? Between 2.5 and 3 volumes of broth for 1 volume of rice. This must represent 1/4 liter of broth per 100 g of rice. Caution: These figures may seem approximate but this difference is justified by:
- the differences in limestone proportions in your water
- the liveliness of your fire.
- altitude also plays an important role in these measurements.
- the cooking time of your rice.
So read the instructions given by the producers, on packages and especially practice! 🙂 Personally at 2.5, I always remained short of broth with a crunchy rice … I choose 3 volumes of water, sometimes a little less: 2,8, if I have food that makes some water, such as seafood, or (horror!) frozen ingredients ..
The sizes of the paellas
The manufacturers indicate on their paellas a number of people which corresponds to the number of guests for whom you will be able to cook in their stove. This one is often wrong: it is too high, you can divide it by two! Instead, follow our directions:
- 30 cm > 2 personnes
- 40 cm > 4 personnes
- 50 cm > 5 personnes
- 55 cm > 6 personnes
- 60 cm > 8 personnes
- 65 cm > 12 personnes
- 80 cm > 20 personnes
These indications are given for a very fine paella result, about 1.5 cm thick: the must of the paella! If you do not have a choice and you still have to cook for more, in a small paella, try not to exceed 2 cm thick, because the taste, the cooking & the texture are really different in the paellas too thick …
